Good EGG Bites - Chocolate Chia Cookies
My name is Nichola Pearce and I am a private chef. I’m hoping you will enjoy this series of recipes I'm creating just for EGG! Hopefully these chocolate chia cookies will become a family staple, or to be honest, they might just become “your” staple, they are so tasty!
These plant based cookies are delicious, store in a Kilner jar on your work top as these are ideal for your mid morning or mid afternoon “bite”.
Treat yourself to some fabulous homemade, healthy treats, these little cookies are perfect with a warming cup of tea.

These cookies include the following goodness: Dates rich in fibre, chia seeds full of omega 3, pecan nuts rich in calcium, magnesium and potassium, gluten free buckwheat flour and cacao contains flavonoids which help lower blood pressure. Whoop whoop!
2 mugs pecan nuts (or another combination almonds, hazelnuts, walnuts)
1 mug buckwheat flour
1/2 mug maple syrup
5 Medjool dates pitted and chopped
3 heaped tbsp of cacao powder
3 tbsp chia seeds
2 tbsp coconut oil
1/4 mug cold water
Pre-heat the oven 180c fan
Place the nuts into a food processor and whiz until they are fine like flour.
Add all your other ingredients with 1/4 mug of water into your mixer and mix thoroughly .
Whiz again to form a sticky dough.
Roll out roughly tablespoon size balls in your hands and place onto your lined baking tray.
Press down with a spatula or fork,making sure there is space between each cookie.
Place into your oven and cook for 20 minutes till slightly brown on top.
Leave to cool for 5 minutes on their tray before placing them on to a cooling rack till cold.
Store in your airtight container and enjoy!
